Paulo Merlot is a medium-bodied red wine with fruit flavors lush berries and plums. The silky smooth tannin structure from oak aging in our best barrels makes this wine a perfect selection for pairings. 

The 2015 Paulo Blend greets the sense with aromas of brown sugar bacon, followed by flavors of baked cherry, black plum, and ripe blackberries. Hints of fig add depth, while velvet tannins provide a smooth, textured mouthfeel. A perfect match for red meats and hearty pasta dishes. 

This Cabernet Franc offers medium-to-full body with rich notes of baked brambleberry and blueberry. Earthy aromas, leather, and hints of tobacco add depth to the wine's profile. It has developed a well-structured tannin presence, while subtle vanilla undertones from oak aging round out the finish.

The 2017 Paulo Merlot delivers cherry cola armoas with mocha and caramel undertones. The palate still highlights bright fruit, with cherry and raspberry evolving into tertiary flavors. Pair with roasted lamb grilled steak, or a rich mushroom risotto with complementary flavors. 

Paulo Tempranillo is a full-bodied wine with rich flavors of blackberry, spiced plum, and a touch of cocoa powder. The wine showcases bold tannins and earthy undertones, complemented by hints of cinnamon and allspice. Aging has created a full mouthfeel and wonderfull texture in each sip.

2018 Primitivo reveals a deep brick-red hue with an intricate boquet of licorice, spiced plum, and dried florals. Layers of cherry, dried blackberries, and tobacco emerge with each sip. Pair with hearty Italian dishes, slow-cooked meats, or aged cheeses.

This Paulo Cabernet Franc has developed noted of exotic mushrooms and dried fennel that delicately come through while the red fruit profile persists with flavors of bramble and baked strawberry. While still a lively wine, its sweet tobacco and spice notes from aging have softened, enhancing the wine's complexity. This Cabernet Franc is an ideal pairing with pork, vegetarian dishes or soft cheeses.

Because they are extremely close in DNA, Primitivo has many of the same characteristics of Zinfandel. Paulo Primitivo has aromas of dill with intense flavors of ripe berries and a touch of pepper. 

Our 2016 Primitivo originally had jammy dark fruit flavors and rustic cedar aromas. Since its release, more notes of olive and herbs have developed with hints of cedar that are light on the nose. A perfectly balanced wine that complements steaks or italian dishes with thick red sauce.
